Latgalian recipes: "Sirņiki"

This recipe is taken from "Īsakūd Latgolā", a program on Latvian Television exploring the culinary delights of the Latgale region in Latvia. Today's recipe is "sirņiki", an Eastern Slavic traditional dish which long ago crossed the border from Belarus into Latgale to become part of the local cuisine.

Ingredients:

500 g curd

3 free range eggs

1 cup flour

sunflower oil for frying

sugar

salt

 

Directions:

1. Put the curd, eggs, flour, salt and sugar into a bowl. Knead thoroughly. The longer you knead, the lighter the “sirņiki” will be. The dough is the right consistency when it no longer sticks to your hands.

2. Heat a little oil in a pan. Shape the dough into small patties. Fry until brown on both sides.

3. Serve with jam or sour cream.
