Latgalian recipes: "Grūslis"

This recipe is taken from "Īsakūd Latgolā", a program on Latvian Television exploring the culinary delights of the Latgale region in Latvia. Today's recipe is "grūslis", the name of which comes from the verb "sagrūstīt" or "to crush" due to the seemingly crushed texture of the dish.

Ingredients:

1 kg pearl barley

300 g smoked bacon

1/2 cup hemp seeds

200 g gray peas – boiled

200 g beans – boiled

100 g butter

salt

 

Directions:

1. Wash the pearl barley three times until the water runs clear.

2. Cook according to instructions, add salt or other spices to taste.

3. Add the boiled peas and beans to the barley and stew for a few minutes.

4. Cut the bacon into cubes and fry them in a pan. Add crushed hemp seeds and then mix in the barley.
